Sausage Roll in Flaky Puff Pastry w/ a Homemade Grainy Honey Mustard
An easy, delicious meal with British origins
If you’re anything like I was a few months ago, you might be like Jessie, WTF is a sausage roll?!
But in the past 9 months of living in Toronto, I have been bombarded with sausage rolls left and right (yes, yes, *insert joke* haha). In that time I’ve learned that they’re a very popular British street food and boy have I been missing out. I mean, they are literally exactly what they sound like, a log of sausage rolled up in flaky puff pastry with an optional dipping sauce.
I love that they feel appropriate any time of day and on just about any occasion. I’ve eaten them for a walking breakfast, a re-heated lunch, or a dinner with a side salad.
They’re not groundbreaking, but they’re a simple indulgence that I’ve grown to love in a short amount of time… and I think you will too!
With their British roots, these sausage rolls feel like the perfect snack for a cool, overcast summer day. I mean, they’d be great by the pool in the heat too but follow my vibe. Harry’s House is one of my favorite background music albums ever and I think it goes well with the all-around Brit theme we have here.
The buttery pastry and savory sausage are begging for a crisp and refreshing drink pairing. I am not a big beer drinker, but an ice cold pilsner would be lovely with this. Pilsners are light, crisp, and have a “mild hop bitterness”. I could also see it pairing well with a cava brut or extra brut. An extra brut only “up to 6 grams of sugar per litre can be added, offering a Cava that pairs well with dishes that have an oilier texture.”
I’ve always enjoyed this bottle of Freixenet (it’s just brut but it’s great) that I’ve bought from Trader Joe’s in the past.
Sausage Roll in Flaky Puff Pastry w/ a Homemade Grainy Honey Mustard
Ingredients
For Sausage Rolls
1 tbsp Good Olive Oil
1/2 medium onion finely diced
1 pound Italian sausage meat
2 large eggs (one of these is for the egg wash)
1/2 cup panko breadcrumbs
2 Sheets Puff Pastry, thawed
2 tbsp flour (for pastry)
Everything Bagel Seasoning (optional)
For The Honey Mustard
2 tbsp Mayonnaise
2 tbsp Dijon
1 tsp honey
I tsp whole grain mustard (optional)
Instructions
Pre heat oven to 400 degrees with the rack in the middle. Sprinkle flour on a clean surface, then prepare puff pastry dough by unfolding it and laying it flat. Cut the puff pastry dough in half on the longer side so you have two even rectangles. Line sheet pan with parchment paper and set aside.
Whisk 1 tsp water and 1 egg in a small bowl for the egg wash. Set aside.
In a small skillet, heat 1 tbsp of olive oil on medium heat. Add onions and sautee until lightly browned. Set aside and let cool.
In a large bowl, use your hands to mix sausage meat (if cased, cut open the casing and discard), eggs, breadcrumbs, and onions until evenly combined.
Arrange the sausage mixture into a long sausage shaped log toward one side of the puff pastry, leaving about an inch or so (see above). Starting on the shorter side, tightly roll the pastry until it’s overlapping about an inch or so. Add a brush of egg wash inside the oveverlapped pastry to help seal it. Trim any extra pastry if needed.
Using a knife, slice rolls into desired length. If you’re making an appetizer, you can make smaller, bite-sized rolls a few inches wide. If you’re making dinner (like me) you can make them longer — 6 inches or so.
Brush eggwash on top and sprinkle with everything bagel seasoning.
Arrange them on a baking sheet with at least 1-2 inches of space between them. Put them in to bake for 25-30 minutes until the pastry is golden brown and the internal temp reaches a minimum of 145 degrees. Sausage meat can become very dry when overcooked so check the temp periodically.
In a small bowl, add all of the honey mustard ingredients and mix to combine.
Let rolls cool and enjoy!
Skip the honey mustard dipping sauce if it doesn’t sound appealing! These are fantastic on their own. They would also be delicious served with ketchup.
If your sausage gets to temp before your puff pastry gets golden brown, throw it under the broiler for like 10-20 seconds. DO NOT WALK AWAY! It will burn quickly.
If you have picky kids or don’t like Everything bagel seasoning, just leave it off. Not a big deal.
